- 200g nyimo bean sprouts (see sprouting method)
- 200g okra cut into rounds
- 3 shallots cut into rounds
- 1 bunch young blackjack leaves and shoots
- 1 large tablespoon of peanut butter
- Sauté the shallots in a little butter or sesame oil. Add the okra and stir fry until soft adding a little water if necessary.
- Add the nyimo beans and cook for about 5 minutes.
- Stir in the peanut butter to form a creamy sauce.
- Add the blackjack leaves and cook gently for about 1 minute.
- Serve warm.
