• 200g nyimo bean sprouts (see sprouting method)
  • 200g okra cut into rounds
  • 3 shallots cut into rounds
  • 1 bunch young blackjack leaves and shoots
  • 1 large tablespoon of peanut butter


  1. Sauté the shallots in a little butter or sesame oil. Add the okra and stir fry until soft adding a little water if necessary.
  2. Add the nyimo beans and cook for about 5 minutes.
  3. Stir in the peanut butter to form a creamy sauce.
  4. Add the blackjack leaves and cook gently for about 1 minute.
  5. Serve warm.
