- 1 medium butternut
- 1 large sweet potato
- 200g nyimo bean sprouts (see sprouting method)
- Scrub the skin of the butternut and sweet potatoe. Do not remove unless they are very dirty. The nutrients are in the skin.
- Cut the butternut and sweet potatoes into quarters, drizzle with oil and roast until soft and brown (20-30 minutes). Cut into cubes.
- Lightly steam the nyimo bean sprouts for about 5 minutes.
- Combine all ingredients and serve warm.
