Recipe from Kufunda Village


  • 3 cups peeled, cooked sweet potatoes
  • 1 ½ cups sugar
  • Fresh lemon juice to taste
  • Water as needed (about 3 cups)


  1. Wash, peel and cut sweet potatoes into small chunks. Boil until soft.
  2. Puree the cooked sweet potato using a blender or a wooden spoon.
  3. Juice the lemon(s).
  4. In a pitcher or jug, combine the sugar, lemon juice, sweet potato puree and enough water to achieve your preferred consistency.
  5. Refrigerate and serve cold.
