Rupiza

Rupiza

Rupiza is a paste made from crushed cowpeas. Sometimes they are roasted before crushing and may be cooked with or without peanut butter.

Ingredients

  • 3 cups cowpeas, peanut butter, salt, water

Instructions

  1. Clean the cowpeas and roast them in a pan.
  2. Remove the hulls by grinding and winnowing.
  3. Crush the de-hulled seed on a grinding stone until broken into small pieces.
  4. Boil the ground cowpeas until cooked.
  5. Add salt to taste.
  6. Stir the rupiza until a fine paste is formed.
  7. Add a little water and peanut butter.
  8. Leave the paste to simmer for 5-10 minutes.
  9. Season and serve hot with brown rice or finger millet rotis.
